Nettle Soup Recipe To Boost Resilience

My teens enjoyed this nettle soup. My husband suggested more nettle. We all agreed the nutmeg was just right.

Picking the Spring tips was a soothing distraction from digging on the allotment in Woking, Surrey, UK.

When my children were toddlers, they got used to getting stung by nettles and knew where the dock leaves grew.

In case you fancy giving nettle soup a try, my DIY recipe is below, adapt to suit.

Cooking them softens the strings and stops the stings.

Here goes -

1 carrot
1 large potato
1 stick of celery
1 leek
1 small onion
1 garlic clove

I collected small freezer size type bag of washed and picked over young nettle tips

Sweat the roughly peeled and chopped veg for a few minutes, then add the veg stock to slightly cover along with the nettle leaves. Boil for about 10 minutes and blend. A swirl of cream would have been nice, we didn’t have any. Sprinkle with nutmeg and seasoning.

The nettles tips can be trimmed well into Summer. We keep a cutting patch and let another area grow long and wild for the insects, safe from growing teenagers who no longer join us anyway.
